Almond-Saffron Rice

Studded with slivers of toasted almonds, this fragrant rice makes a lovely side dish. Instant brown rice gets this on the table in under 30 minutes. If you have more time, prepare this dish with brown basmati rice instead.

½ teaspoon saffron threads

1 tablespoon + 2¼ cups water

1 teaspoon olive oil

½ teaspoon salt

1½ cups instant brown rice

½ cup slivered almonds, toasted

1. In a small bowl, soak the saffron in 1 tablespoon water for 20 minutes. Use the back of a spoon to mash the threads.

2. In a large saucepan, bring the oil, salt, and 2¼ cups water to a boil over high heat. Add the rice and the saffron mixture. Reduce the heat to low, cover, and simmer for 5 minutes. Turn off the heat and let the rice stand for 5 minutes.

3. Fluff the rice with a fork and stir in the almonds.
