Fruity Millet Pilaf

This side dish is a great accompaniment to grilled lamb or chicken kebabs. Dried apples, raisins, or figs can be used in place of the apricots and dates.

2 teaspoons canola oil

2 scallions, thinly sliced

2¼ cups water

23 cup millet

¼ cup orange juice

¼ teaspoon salt

½ cup sliced almonds, toasted

¼ cup dried apricots, chopped

¼ cup pitted chopped dates

1. In a large nonstick skillet over medium-high heat, warm the oil. Cook the scallions, stirring frequently, for 2 to 3 minutes, or until softened.

2. Add the water, millet, orange juice, and salt and bring to a boil. Reduce the heat to medium-low, cover, and simmer for 25 to 30 minutes, or until the millet is tender. Remove from the heat. Fluff the millet with a fork and stir in the almonds, apricots, and dates.
