Bow Ties with Garlic and Pesto

You can use any gluten-free small-shaped pasta you like. Elbows or shell macaroni are both good choices.

8 ounces gluten-free brown rice bow tie pasta

1 tablespoon extra-virgin olive oil

1 onion, thinly sliced

5 cloves garlic, thinly sliced

¼ cup Pesto or store-bought gluten-free pesto

¼ teaspoon salt

8 teaspoons grated Romano cheese

1. Bring a large pot of water to a boil over high heat. Cook the pasta according to package directions. Drain.

2. In a large nonstick skillet over medium-high heat, warm the oil. Cook the onion, stirring occasionally, for 5 minutes, or until soft. Stir in the garlic and cook, stirring often, for 2 minutes, or until fragrant. Remove from the heat. Stir in the pasta, pesto, and salt and toss to coat well.

3. Divide the pasta mixture among 4 plates and sprinkle each with 2 teaspoons of the cheese.
