These spicy, slow-roasted almonds are perfect as an afternoon snack or part of a tapas-style buffet.
1 cup whole blanched almonds
2 teaspoons olive oil
1½ teaspoons chopped fresh rosemary
1 teaspoon smoked paprika
½ teaspoon ground cumin
¼ teaspoon coarse salt
1. Preheat the oven to 300°F.
2. In a small bowl, combine the almonds, oil, rosemary, paprika, cumin, and salt until well mixed.
3. Spread the almond mixture evenly onto a small rimmed baking sheet. Bake, stirring occasionally, for 25 to 30 minutes, or until the almonds are lightly browned. Transfer the pan to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.
