MUFA: ALMOND MEAL
Any mixture of seasonal fruits works well. Chopped plums or peaches would be just as delicious.
1 cup almond meal
3 tablespoons packed brown sugar
2 tablespoons gluten-free tapioca flour
2 tablespoons softened butter
1 teaspoon ground cinnamon
2 cups blueberries
1 cup raspberries
1 cup blackberries
1. Preheat the oven to 400°F. Coat a 1½-quart baking dish with cooking spray.
2. In a small bowl, combine the almond meal, brown sugar, flour, butter, and cinnamon until coarse crumbs form.
3. Place the berries in the bottom of the baking dish. Sprinkle the almond mixture evenly over the berries.
4. Bake for 20 minutes, or until the filling is hot and the topping is browned and bubbly.
