Making these crunchy caramelized candies is easy but does require attention. Make sure there are pot holders and heatproof utensils at hand. And never directly touch the sugar syrup with bare hands.
3 tablespoons sugar
1 tablespoon light corn syrup
1 cup pecans, coarsely chopped
2 tablespoons unsweetened flaked coconut
1. Coat a baking sheet with cooking spray.
2. In a large heavy-bottomed skillet, add the sugar. Drizzle the corn syrup evenly over the sugar and set over medium heat. Cook, without stirring, for 2 to 3 minutes, or until the sugar starts to melt. Tip the pan gently to help submerge any sugar that isn’t dissolved. Scatter the nuts and coconut on top. Cook, stirring occasionally with a heatproof rubber spatula, for 6 to 7 minutes, or until the nuts turn a caramel color.
3. Immediately scrape the mixture out onto the baking sheet. Use 2 spatulas to divide it into 16 clusters, pressing the nuts together as you work. Do not touch the mixture while hot. Set aside to cool. Store in an airtight container at room temperature.
