Sesame-Honey Crunch

Candy making is easy and does not require a lot of equipment. However, a good candy thermometer is a useful tool because time and temperature are critical for good results. Choose one with a metal clamp that attaches to the side of the pan.

1½ cups sesame seeds

½ cup honey

½ cup packed light brown sugar

1 teaspoon pure vanilla extract

¼ teaspoon salt

1. Line an 8″ x 8″ baking pan with parchment paper or waxed paper and coat with cooking spray.

2. In a large skillet, toast the sesame seeds over medium heat, stirring often, for 3 minutes or until lightly golden. Transfer to a small bowl and set aside.

3. In a medium heavy-bottomed saucepan, bring the honey and sugar to a boil over medium-high heat. Cook, stirring constantly, for 10 minutes, or until the mixture registers 250°F on a candy thermometer. Stir in the vanilla, salt, and the reserved seeds and cook, stirring often, for 4 minutes, or until the mixture reaches 275°F on the thermometer.

4. Pour into the prepared pan and let stand for 15 to 20 minutes or until still warm but cool enough to handle. Turn the candy out onto a cutting board and cut into 24 pieces. Cool to room temperature.
