For best results, prepare the pudding a day ahead, then cover and refrigerate overnight to let the flavors meld.
¼ cup sugar
¼ cup unsweetened cocoa powder
2 tablespoons cornstarch
¼ teaspoon salt
3 cups 1% milk
1½ cups semisweet chocolate chips
1½ teaspoons peppermint extract
1. In a medium saucepan, combine the sugar, cocoa powder, cornstarch, and salt. Whisk in the milk and bring to a boil over high heat. Reduce the heat to medium and cook, whisking, for 4 minutes, or until the pudding begins to thicken.
2. Remove from the heat and stir in the chocolate chips and peppermint. Transfer to a bowl. Cover and chill for at least 2 hours, or until set.
