Banana, Pineapple, and Walnut Sundaes

PREP TIME: 10 MINUTES TOTAL TIME: 15 MINUTES MAKES 4 SERVINGS MUFA: WALNUTS

If you have fresh pineapple on hand, you’ll need about four ½-inch slices, cut into small pieces.

1 tablespoon butter

2 bananas, sliced

1 can (4 ounces) unsweetened pineapple chunks, drained well

2 tablespoons sugar

1 pint gluten-free low-fat vanilla frozen yogurt

½ cup toasted walnuts

4 maraschino cherries (optional)

1. In a medium nonstick skillet, melt the butter over medium-high heat. Add the bananas, pineapple, and sugar and cook, stirring occasionally, for 2 minutes, or until just softened and warm.

2. Scoop ½ cup of the frozen yogurt into each of 4 dessert dishes. Top with one-fourth of the fruit mixture and 2 tablespoons of the walnuts. Top each with 1 maraschino cherry, if using. Serve immediately.
