Broccoli Zucchini Egg Bake
Broccoli is a cruciferous vegetable that should be eaten several times a week. Its many health benefits include kidney, immune system, and heart health as well as the prevention of arthritis and cancer. Broccoli also contains Vitamin K which supports bone health and prevents blood from clotting and Vitamin C which helps fight against free radicals.

Ingredients
Eggs.....8 medium
White onion.....½ large, diced
Zucchini.....2 medium, diced
Broccoli.....1 medium head, chopped
Salt.....1 teaspoon
Black pepper.....½ teaspoon
Fresh parsley.....1 tablespoon, chopped
Directions
Preheat the oven to 350 °F (175 °C).
On a cutting board, prepare the zucchini and broccoli
In a small bowl, add the eggs, salt and pepper then whisk together.
Add the zucchini and broccoli to the bowl of eggs.
Stir to coat the vegetables with the egg mixture.
Coat a ramekin or a single serving baking dish with coconut oil non-stick spray and pour the mixture into the baking dish.
Bake the prepared dish for 25 minutes or until the eggs are set.
Remove the dish from the oven and let it rest for 5 minutes before topping with chopped parsley. Serve warm.
