Raspberry Coconut Ripple
Raspberries have long been associated with cancer prevention. Their phytonutrients play a huge role in reducing inflammation and altering the reproduction of cancer cells. Ingredients
Frozen raspberries..... 1/3 cup
Shredded coconut..... 1/3 cup
Coconut oil..... 1/3 cup
Organic, salted butter..... 80 grams
Raw cacao powder or cocoa..... 2 tablespoons
Rice malt syrup..... 2 tablespoons
Directions
Line a dinner plate with wax paper.
Scatter the berries and shredded coconut on the plate.
In a small saucepan, melt the butter and oil.
Stir in the raw cacao powder, or cocoa, and rice malt syrup.
Stir until the syrup melts and the mixture blends smoothly.
Pour the smooth mixture over the berries and coconut.
Put into the freezer for 20 minutes or until firm.
Break or cut into shards and serve immediately.
