Chia Seed Power Balls
Chia seeds provide a huge amount of nutrients with virtually zero calories. They are loaded with antioxidants and contain high levels of quality protein and fiber that can help you lose weight. Chia seeds are also a great source of omega-3. They reduce inflammation; enhance cognitive performance and lower cholesterol. They are also a source of calcium, phosphorus, magnesium, and manganese.
Makes 10 power balls
Ingredients
Sweet potatoes..... 450 grams cooked and mashed
Almond butter....2 heaping tablespoons
Chia seeds..... 1 tablespoon
Raw cacao powder.....2 teaspoons
Ground cinnamon.....1 teaspoon
Ground ginger..... ¼ teaspoon
Ground cardamom..... ¼ teaspoon
Ground liquorice..... ¼ teaspoon
Coconut oil for rolling
Desiccated coconut for rolling
Directions
In a large bowl, combine the mashed sweet potatoes, almond butter, and Chia seeds.
In a small bowl, mix the cacao powder, cinnamon, ginger, cardamom, and ground liquorice.
Stir the spices from the small bowl into the large bowl of mashed sweet potatoes. Mixing the ingredients together will make the dough gooey and sticky.
In a small bowl, add a few drops of the coconut oil. Dip your fingers into the coconut oil and rub over your hands lightly. Roll the dough into ten balls and chill in the refrigerator for about 20 minutes. Remove from fridge and roll in the desiccated coconut before serving.
The power balls will keep well if refrigerated. Be sure to store in the fridge.
