By now, you might have all guessed that ‘my boys’ and their families enjoy food. Like Jess and her brownies in The Daddy Pact, and Chris who pretty much likes anything he can get his hands on, Darby is rather enthralled with this particular dessert in her story, so I thought I’d share this yummy recipe with all of you!
Creamy Orange Gelatin
2 – 3 ounce packages of orange gelatin
2 cups boiling water
1pint of vanilla ice cream
3/4 cups orange juice (fresh or frozen/reconstituted is best)
1 – 11 ounce can of mandarin oranges (drained)
Dissolve gelatin in boiling water. Add juice and ice cream. Stir until well blended. Chill until partially set, then fold in orange slices. Spray a 6-cup mold with non-stick spray and pour mixture in (or just leave in the bowl if you’re not aiming for fancy). Refrigerate overnight, or until firm (or not, if you can’t wait) and enjoy!
