Lemon Kale Salad

Light, lemony, and fresh, this salad is great for lunch or served along with an entrée.

Ingredients

Serves 4

10 ounces kale leaves, coarsely chopped (thick ribs and stems removed)

14 teaspoon sea salt

12 cup extra-virgin olive oil

12 teaspoon freshly ground black pepper

Juice of 2 medium lemons

14 cup slivered almonds

  1. Place kale in a large salad bowl. Add salt and olive oil and massage with hands until kale leaves become soft.
  2. Add pepper, lemon juice, and almonds. Stir well to combine.
