Baba Ghanoush Sandwich

This vegetarian sandwich is so addictive that you’ll want it every week!

Ingredients

Serves 4

8 tablespoons Baba Ghanoush (see Chapter 3)

8 pieces gluten-free bread

3 vine-ripe tomatoes, sliced thin

1 medium cucumber, sliced into thin rounds

4 large leaves romaine lettuce, trimmed and sliced in half

1 medium lemon

  1. Spread 1 tablespoon Baba Ghanoush on each piece of bread.
  2. For each sandwich, place 3 thin slices tomato, 3 thin slices cucumber, and 2 pieces romaine on 1 slice of bread.
  3. Squeeze lemon juice on opposite slice of bread. Place pieces of bread together to form a sandwich.
