Citrusy Swordfish Skewers

This sweet and savory marinade works just as well with tuna steak. Serve these skewers with a glass of Sauvignon Blanc (please see note on alcohol in Appendix B).

Ingredients

Serves 4

2 tablespoons garlic-infused olive oil

1 tablespoon orange juice

1 teaspoon dried oregano

12 teaspoon sea salt

4 (4-ounce) swordfish steaks, cut into 2" cubes

2 medium oranges, peeled and cut into 6 portions each

  1. Combine oil, orange juice, oregano, and salt in a medium bowl. Whisk to combine.
  2. Add fish and orange pieces to marinade. Toss to coat. Marinate 60 minutes, tossing occasionally.
  3. Skewer the swordfish and orange pieces in an alternating fish/fruit pattern.
  4. Heat grill or broiler to medium. Grill or broil skewers 15 minutes, turning once, until fish is cooked through. Serve immediately.
