Chicken, Ham, and Blueberry Melt

These yummy sandwiches will melt your little one’s heart!

Ingredients

2 pieces gluten-free bread

14 cup Blueberry Chia Seed Jam (see Chapter 13)

2 slices thin-sliced deli ham (about 2 ounces)

4 ounces shredded rotisserie chicken

2 slices Havarti cheese

Save Some Time—Buy a Rotisserie Chicken

You can most certainly cook your own chicken, but if you have little ones, a rotisserie chicken will save some time. To make your own shredded chicken, place 3 chicken breasts in a saucepan and cover with water. Place saucepan over medium heat, bring to a boil, and simmer 10–12 minutes or until chicken meat is cooked through. Allow chicken to cool on a plate and then shred with forks.

  1. Heat a broiler with rack set 4" from heat. Line a rimmed baking sheet with aluminum foil.
  2. Place bread on baking sheet and spread with blueberry jam; layer each slice with 1 slice ham, about 2 ounces chicken, and 1 slice cheese.
  3. Broil until cheese is melted, 4–6 minutes. Serve immediately, as open-faced sandwiches.
