Ginger Sesame Salad Dressing

Dress tofu with this dressing or use it for any Asian-inspired salad or to top vegetables in collard green wraps.

Ingredients

Makes 1 cup

12 cup extra-virgin olive oil

14 cup rice wine vinegar

2 tablespoons gluten-free soy sauce (tamari)

2 tablespoons demerara sugar

1 teaspoon sesame oil

1" piece fresh gingerroot, minced

Ginger has long been prized for its health benefits. It is known to soothe nausea, it supports the immune system, and it has strong anti-inflammatory effects. Fresh ginger can be stored in your refrigerator up to 3 weeks or in the freezer up to 6 months.

Blend all ingredients in a blender or food processor until smooth. Dressing can be stored 1 week in refrigerator. Bring to room temperature before serving.
