Pomegranate Salsa

Use this beautiful-looking and tasty salsa on fish, poultry, or scooped up with gluten-free tortilla chips.

Ingredients

Makes 4 cups

113 cups diced cucumber

212 cups pomegranate seeds

1413 cup finely chopped cilantro

Juice of 12 medium lime

1 tablespoon maple syrup

2 tablespoons slivered almonds

18 teaspoon sea salt

  1. Add cucumber and pomegranate to a medium serving bowl.
  2. Combine cilantro, lime juice, maple syrup, almonds, and salt in a small bowl; stir to combine.
  3. Add to bowl with cucumber and pomegranate and toss gently to combine.
