Briefcase Bircher

Serves 1

• 1/3 cup (35g) rolled oats

• 6 raw almonds

• 4 raw hazelnuts

• 1 teaspoon sultanas

• 1/2 apple (or 1/4 apple, 1/4 pear)

• 4 tablespoons (80g) yoghurt

• 1 teaspoon honey

Place the oats, almonds and hazelnuts into the thermo bowl.

Pour the oat mix into a small bowl, add the sultanas and mix through yoghurt. Soak overnight in the fridge.

The next morning, place the apple and honey into the thermo bowl.

Stir the apple and honey through the oat mix. Spoon into a small airtight container and mix in yoghurt and sultanas. Place into briefcase with a spoon for those mornings when you dine on the run with your ‘briefcase’.
