30-Second (no bake) Chocolate Brownies

Makes 16

• 1 cup (170g) almond meal

• 1/2 cup (60g) cocoa powder

• 2 tablespoons brown sugar

• 2 cups (340g) pitted dates

• 21/2 tablespoons (40g) coconut oil

• 1/3 cup (40g) walnuts

• 1/4 cup (30g) moist coconut flakes

Line an 18cm square cake tin with baking paper. Place almond meal, cocoa powder and sugar into the thermo bowl.

Add the dates and coconut oil.

Add walnuts.

Using the spatula, scrape the mixture into the prepared tin then using your hands bring the dough together, pressing gently across the base of the tin. Level the surface, then sprinkle with the coconut, pressing it lightly into the surface. Cover with cling wrap, and chill for at least 2 hours before slicing to serve.
