Sugarless Banana Ice-cream

Serves 2

• 2 frozen bananas, chopped

• 1/4 cup (65g) coconut milk, shaken

• 1 teaspoon vanilla extract

Combine all ingredients into the thermo bowl.

Using the spatula, scrape down the sides of the bowl.

Pour the soft serve into a freezer safe container. Cover and freeze for at least 2 hours to create a thick, creamy sugarless ice-cream.

TIP: With the leftover coconut milk, make a yummy 4 Ingredient Thai Green Curry for dinner. Fry off 1 tbsp. Thai green curry paste, add chicken pieces and sauté stirring regularly for 3 to 4 minutes. Add leftover coconut cream and green beans, cover and simmer for 10 minutes. Serve over fluffy jasmine rice, garnished with fresh coriander leaves.
