Pour the reduction into a jar. Set aside uncovered as it will thicken as it cools. Rinse the thermo immediately with hot, soapy water.
OPTIONAL SEASONINGS: 1 to 2 garlic cloves cut in half, sprig fresh rosemary, black pepper, 1 tablespoon port wine, orange zest.
SERVING SUGGESTIONS: Drizzle over pizza, or make a delicious salad dressing over rocket, sliced pear and soft blue cheese. Drizzle over a slice of sharp cheddar on fresh sourdough. Serve over a scoop of creamy vanilla ice-cream and fresh strawberries.
