Cheese & Bacon COB LOAF

A delicious creamy COB LOAF is just perfect for a pre-lunch or dinner gathering, especially this one. Every time I make it, I am asked for the recipe.

Serves 8

• 1 cob loaf

• 250g rindless bacon, chopped

• 1 onion, peeled and quartered

• 1 tablespoon butter

• 250g cream cheese

• 300g cream

• 2 cups (200g) grated mozzarella

• 1 cup (100g) grated cheddar cheese

• 1 cup English Spinach, chopped

Cut the top off the cob loaf and pull the soft bread out. Preheat oven 180°C.Place the top and stuffing aside. Into the thermo bowl, place bacon and onion.

Scrape down the sides and add butter.

Add cream cheese, cream and grated cheeses. Season with cracked pepper.

Half way through, remove MC and add spinach. Fill the cob loaf with the mixture. Place bread lid on and wrap in foil. Bake for 45 minutes. Remove foil, add bread pieces and bake for another 10 minutes, or until nice and crisp. To serve, place on a heat resistant platter with crispy bread pieces around the outside to use as dippers.
