Sweet Corn Fritters ~ served with “Must Have Guacamole”

Makes 8

• 2 spring onions, trimmed and roughly chopped

• 2 tablespoons (30g) butter

• 3 fresh corn cobs, kernels only, removed from cob

• 3/4 cup (130g) plain flour

• 1/3 cup (80g) milk

• 1 large egg

• 1 tablespoon sweet chilli sauce

• 1 tablespoon fresh coriander

Into the thermo bowl, place spring onions.

Scrape down the sides and add 1 tablespoon of butter.

Add everything else (except remaining butter) and season with sea salt and cracked pepper.

Into a large nonstick frying pan, melt a little of the butter. Once hot, fry spoonfuls of the mixture for about 2 minutes each side or until golden and crisp on each side. Serve with a salsa or a quick salad of red capsicum, spring onions, tomatoes and cucumber or this …

OPTIONAL: A dollop of my “Must Have Guacamole” from 4 Ingredients Diabetes. Cube an avocado, finely chop half a Spanish onion, a small vine-ripened tomato and 2 tablespoons of freshly chopped coriander. Mix gently to combine. Season with sea salt and cracked pepper.
