Zucchini & Ricotta Fritters

Serves 6

• 1 zucchini, quartered

• 2 tablespoons fresh coriander leaves

• 2 tablespoons freshly chopped chives

• 2 eggs

• 160g ricotta

• 3/4 cup (140g) plain flour

• 2 tablespoons (30g) olive oil

• 1/4 cup (80g) sweet chilli sauce

Place zucchini, coriander and chives into the thermo bowl.

Add eggs and ricotta.

Add flour and season to taste.
