Lamb with Date & Pistachio Salsa

Serves 4

• 4 lamb chops

• 2 oranges, peeled and quartered

• 2 tablespoons (20g) pistachios

• 8 fresh pitted dates

• 1/2 cup mint

In a nonstick frying pan or on a BBQ, grill the lamb for 4 minutes each side or until done to your liking. Meanwhile place the oranges, pistachios, dates and mint into the thermo bowl.

Serve the Thermo-Licious salsa on top of each chop with a fresh salad or selection of seasonal veggies.
