Homemade Tomato Sugo

Makes 1 litre

• 1 carrot

• 1 Spanish onion

• 2 sticks celery

• 3 cloves garlic

• 3 tablespoons (45g) olive oil

• 1kg Roma tomatoes, chopped, discarding seeds

• 375g jar tomato paste

• 1 tablespoon (12g) brown sugar

• 2 cups (500g) vegetable stock

Add the carrot, onion, celery and garlic to thermo bowl.

Add olive oil and season with sea salt and pepper.

Add the tomatoes, tomato paste, brown sugar and stock.

SERVING SUGGESTION: Serve this with your family’s favourite pasta (ravioli is ours), over meatballs, on meatloaf, with lasagne or polenta.
