• 1 onion, quartered
• 4 garlic cloves, peeled
• 1 capsicum, quartered and deseeded
• 2 tablespoons (30g) olive oil
• 300g eggplant, diced
• 2 zucchinis, diced
• 3 tomatoes, chopped
• 1 tablespoon (20g) tomato paste
• 1 tablespoon fresh thyme
• 1/4 cup chopped fresh basil
Into the thermo bowl, place the onions, garlic, and capsicum.
