Ratatouille Stew

Serves 4

• 1 onion, quartered

• 4 garlic cloves, peeled

• 1 capsicum, quartered and deseeded

• 2 tablespoons (30g) olive oil

• 300g eggplant, diced

• 2 zucchinis, diced

• 3 tomatoes, chopped

• 1 tablespoon (20g) tomato paste

• 1 tablespoon fresh thyme

• 1/4 cup chopped fresh basil

Into the thermo bowl, place the onions, garlic, and capsicum.

Scrape down the sides of the bowl with the spatula. Add olive oil.

Add eggplant, zucchinis, tomatoes and tomato paste. Season to taste.

With 5 minutes remaining remove MC and add the thyme and basil. Serve with rice and sprinkled with Parmesan or use any leftovers the next day as a divine pizza sauce, sprinkle with feta and drizzle with balsamic vinegar to create your very own Ratatouille Pizza!
