• 1 sheet puff pastry
• 50g Parmesan cheese, cubed
• 1 clove garlic
• 150g English spinach
• 1 cup (250g) sour cream
• 4 eggs
• 2 sprigs of dill
Heat oven to 180°C. Line a 20cm quiche dish with baking paper and then puff pastry. Gently press the pastry to fit into the flat of the base. Bake in oven for 15 minutes. Place the Parmesan into the thermo bowl.

Remove half and set to one side. Add the garlic.

Add spinach, sour cheese, eggs and dill. Season to taste.

This results in a nice chunky rustic texture. Pour the mixture into the pre-baked pastry case. Sprinkle with reserved Parmesan and bake for 25 minutes or until golden.
