Stamppot

Serves 4

• 2 carrots, peeled and sliced into 2cm pieces

• 1/2 Swede, peeled and diced

• 1/2 parsnip, peeled and diced

• 2 cups (500g) vegetable stock

• 1/4 teaspoon ground nutmeg

Place vegetables and stock into the thermo bowl.

Add nutmeg.

Season to taste with freshly ground pepper.

SERVING SUGGESTIONS: This is just delicious served as a side with grilled meat and steamed greens or as a main. Pour the mixture into a pie dish and sprinkle with grated cheddar cheese. Bake in a 180°C oven for 15 minutes or until golden and serve with buttery corn on the cob and steamed greens.
