Red Velvet Cupcakes

Makes 16

• 1/3 cup (80g) butter, cubed

• 400g can condensed milk

• 1 cup (170g) self-raising flour

• 1 egg

• 2 tablespoons (16g) cocoa powder

• 1 tablespoon red food colouring

Preheat oven to 180°C. Line 16 cupcake tins with papers. Place all the ingredients into the thermo bowl.

Spoon the mixture into the cupcake cases and bake for 15 minutes. Stand the cakes in the pans for 2 minutes. Transfer to a wire rack to cool.

OPTIONAL: Top with Cream Cheese Frosting.
