• 1 sheet shortcrust pastry
• 1 lemon, peeled, quartered and seeds removed
• 1/2 cup (100g) caster sugar
• 3 eggs
• 2 tablespoons (30g) butter
From the pastry cut 6 rounds and mould each into a cupcake tin. Bake in a 180°C oven for 5 to 6 minutes or until just golden. Place the lemon segments into the thermo bowl.

Scrape down the sides. Add sugar and eggs.

With 1 minute remaining remove the MC and add the butter to the mixture. Cool slightly, then pour the lemon curd into the pastry cases. They will set in the cooling process.
