Nana’s Impossible Pie

Serves 8

• 4 eggs

• 1/2 cup (85g) plain flour

• 2 cups (500g) milk

• 1 cup (200g) sugar

• 1 cup (120g) desiccated coconut

• 2 teaspoons vanilla extract

Preheat oven 180°C. Place all the ingredients into the thermo bowl.

Pour the mixture into a 20cm paper-lined pie dish. Bake for 1 hour or until golden and set in the centre. The milk and eggs form a custard, and the other ingredients form the base and topping while baking.
