Baileys Zabaglione

Makes 4

• 1/2 cup (100g) caster sugar

• 2 eggs

• 4 egg yolks

• 3/4 cup (185g) Baileys Irish liqueur

Insert the butterfly over the sharp, lower blade and add the sugar, eggs and egg yolks.

Add the Baileys.

Serve immediately in 4 x half-cup glasses or ramekins.

TIP: With remaining egg whites make a Pavlova, meringues, macaroons, or a healthy egg white omelette. Remember they also freeze beautifully, just as good thawed as they are fresh!
