Banana & Blueberry Quinoa Purée

Makes 11/2 cups

• 1/3 cup (70g) quinoa

• 2/3 cup (160ml) water

• 2/3 cup (100g) blueberries

• 1 banana (200g), chopped

• 1 tablespoon water (extra)

Place quinoa in a fine sieve and rinse under cold running water. Drain well. Combine quinoa and the water in a small saucepan and bring to the boil. Reduce heat to low and simmer, covered, for 12 minutes or until liquid is absorbed and quinoa is tender. Cool. Add quinoa to the thermo bowl with remaining ingredients.

Blend until nice and smooth.
