Perfect Chocolate Cupcakes

My husband loves chocolate cupcakes and cakes. It’s his number one choice and his chocolate-loving taste buds have been passed down to our two little boys. These Perfect Chocolate Cupcakes are soft, rich, moist, and chocolaty—everything you or your kids could possibly want in a chocolate cupcake! If you don’t want cupcakes, you can also make this recipe into two 9-inch cakes that are perfect for birthday parties!

YIELDS 24 CUPCAKES OR TWO 9-INCH CAKES

2 cups flour

2 cups sugar

2 teaspoons baking soda

2 teaspoons baking powder

34 cup cocoa powder

12 teaspoon salt

1 cup vegetable oil

2 eggs

1 cup boiling water

1 cup cold water

1. Preheat oven to 350°F.

2. Mix together all ingredients in a large bowl until combined.

3. Place cake into a greased 9" × 13" pan, two 9-inch cake pans, or two cupcake pans.

4. Bake for 25 minutes or until a fork inserted into the middle of the cake or cupcakes comes out clean. Allow cake or cupcakes to cool completely before icing. Cover iced cupcakes or cake with plastic wrap or store in an airtight container for 2–3 days.
