Ice Cream Sandwiches

One of my little boys’ favorite ice cream treats is an ice cream sandwich. We decided to make our own version one day and not only was it a refreshing treat but it was a fun, summertime activity that any kid can do! My little boys love being able to decorate their own food and this was a fun way they got to choose their favorite toppings.

YIELDS 6 COOKIE SANDWICHES

1 quart vanilla ice cream or flavor of your choice

1 cup peanuts

14 cup rainbow sprinkles

12 cup semisweet chocolate chips

1 dozen of your favorite chocolate chip cookies, either homemade or store-bought (I love using the regular Chips Ahoy! cookies)

1. Place your ice cream on the counter and allow to soften slightly.

2. Crush the peanuts by placing them in a sandwich bag and lightly hitting them with a rolling pin or wooden spoon. Place crushed peanuts in a small bowl or plate, or in mini baking cups if you plan on having your kids decorate the cookies.

3. Place the sprinkles and semisweet chocolate chips in two separate small bowls, on two plates, or if your kids will be decorating, place them in two mini baking cups.

4. Using a small kitchen spatula, spread ice cream on the bottom of one cookie and place your second cookie on top of the first cookie facing up.

5. Roll the sides of the cookie in your desired topping. You can also have your kids use their hands to decorate their cookies.

6. Repeat with remaining cookies, then put them on a small plate and place in freezer until ice cream hardens again, about 15–20 minutes.
