Here’s another springtime treat that is perfect for the little ones in your life. These little bunnies are made out of one of my favorite treats, peanut butter sandwiched between two Ritz crackers. But this recipe takes this delicious treat one step farther and covers the peanut butter sandwich in melted chocolate. You just can’t go wrong with peanut butter and chocolate and these bunnies are so cute that your kids will be asking for them year round!
1⁄2 cup peanut butter
24 Ritz crackers
1 (1-pound) bag brown chocolate candy melts
12 mini marshmallows
1. Using a small spatula or knife, spread a small amount of peanut butter on twelve Ritz crackers. Place the other twelve crackers on top.
2. Melt chocolate candy melts in a candy melting electric pot according to the package instructions, or in the microwave at 30-second increments.
3. Dip Ritz sandwiches in melted chocolate with candy melt dipping scoop or fork and cover completely. Remove Ritz sandwiches from melted chocolate with a candy melt dipping scoop or fork and tap edge lightly to remove any excess.
4. Place Ritz sandwiches on a piece of parchment paper or Silpat and refrigerate until chocolate hardens, approximately 10 minutes.
5. On a Silpat or piece of parchment paper, paint a 2–3-inch-long circular bunny’s head with two 1–2-inch-long ears at the top using the melted chocolate and cake-decorating paintbrushes. Place in refrigerator until chocolate hardens, approximately 5 minutes.
6. Using the melted chocolate as glue, stick the bunny’s head to the top back of the Ritz sandwich and the mini marshmallow to the bottom front of the Ritz sandwich to create a tail.
7. Repeat with remaining chocolate-covered sandwiches and place in refrigerator until chocolate has hardened, approximately 5 minutes. Enjoy!
