Smoked Trout and Lemon Zest Spelt Pasta

Serves: 1-2 | Prep: 5 minutes | Cooking: 10-15 minutes | Dairy Free

INGREDIENTS

125g spelt fettuccini or spaghetti

175-200g smoked trout, roughly chopped

1 tablespoon lemon zest

1 small bunch or half a bunch flat-leaf parsley, finely chopped

2 tablespoons extra virgin olive oil

1 garlic clove, crushed

Sea salt and pepper to taste

1 packet spelt fettuccini or spaghetti

METHOD

  1. Fill a large saucepan with water and bring to the boil. Place the pasta into boiling water and cook till al dente.
  2. Once cooked, drain the water and toss the pasta with the remaining ingredients.
  3. Season to taste.

Tip: Hot smoked salmon can be replaced with trout and for an extra kick add a pinch of chilli flakes!
