Fibre-Rich Chickpea Cookies

Makes: 10 cookies | Prep: 10 minutes | Cooking: 20-30 minutes | Vegetarian – Dairy Free

INGREDIENTS

1 cup canned chickpeas, well rinsed

1 tablespoon wholemeal or brown rice flour

1 teaspoon vanilla extract

1 teaspoon baking powder

¼ cup honey or maple syrup

½ cup hulled tahini

1 cup sultanas or other dried fruit

200g sultanas or other dried fruit

METHOD

  1. Pre-heat oven to 175°C and line a baking tray with non-stick paper.
  2. In a food processor, mix all ingredients until smooth.
  3. Spoon heaped tablespoons of batter onto the prepared tray, about 1-2cm apart, and flatten slightly with a spoon.
  4. Place in the oven and bake for approximately 20 minutes.
  5. Cool biscuits on the tray for at least 10 minutes, then transfer to a wire rack to cool completely.

Tip: For a chocolate hit, simply add 1 tablespoon cocoa powder to the mix.
