Makes approx. 240 ml (8 fl oz)
125 g (4½ oz/1 cup) raspberries, fresh or frozen
1½ tbsp maple syrup • sprig of mint, leaves only
Such a simple but lovely thing to whip up. Swirl it through or drizzle it on pretty much anything for a burst of flavour.
Pop the raspberries and maple syrup into a blender or food processor and blitz until smooth. Add the fresh mint and blend again for a few seconds, adding a splash or two of water to get the desired consistency. Store in a sealed jar in the fridge. It will keep in the fridge for 2–3 days.
