AVOCADO AND BLUEBERRY SMOOTHIE BOWL
Serves 1
1 banana, peeled and frozen • small handful of spinach or kale
125 ml (4 fl oz) apple juice • ½ ripe avocado • a good squeeze of lemon juice
thumb-sized piece of ginger, peeled
Topping:
1 handful of blueberries • grated coconut
Blend everything together in a food processor until thick and creamy, scraping down the sides every 30 seconds. Process until the mixture becomes completely smooth. Pour into a bowl and top with the blueberries and coconut.
BLUEBERRY, COCONUT AND AÇAÍ SMOOTHIE BOWL
Serves 1
½ banana, peeled and frozen • 1 packet (around 100 g/3½ oz) frozen açaí purée
80 g (3 oz/½ cup) frozen blueberries • ½ tbsp agave or maple syrup
125 ml (4 fl oz) pomegranate juice
Toppings:
sliced bananas • pulp of 1 passion fruit
Put the banana, açaí purée, frozen berries, and agave in a blender. Add the pomegranate juice and process until the mixture becomes completely smooth. Pour into a bowl and top with the bananas and passion fruit and enjoy.
