ORANGE BANANA SMOOTHIE POPS

Makes 6

250 g (8 oz/1 cup) coconut yoghurt
170 ml (5½ fl oz) freshly squeezed orange juice, plus zest of 1 orange
2 large bananas, peeled and frozen
zest of 1 lime • 1 tbsp freshly squeezed lime juice

These are perfect on a summery day. Everyone loves them, and they are always a hit with everyone, particularly the kids

Purée the coconut yoghurt, orange juice, orange zest, bananas, lime zest and fresh lime juice in a blender or food processor. Pour into 6 moulds, add a stick to each mould. Freeze until the smoothie pops are solid (about 4 hours).

To release the pops, dip the moulds into warm water. Don’t use hot water or the pops will melt and won’t hold their shape! Firmly pull up on the sticks and carefully remove the pops from the mould.

Top Tip: Paper cups work really well for these pops – just lightly grease the cups with coconut oil to ensure they don’t stick. There is something very satisfying about peeling off the paper cup to release the lolly!
