This is a relish that can be served to enhance a variety of dishes, including stews, pap and samp. Although its origin is in the street food of the townships, it is now widely popular.
3 Tbsp vegetable oil
1 onion, finely chopped
1 tsp masala
2 cloves garlic, peeled and chopped
2 carrots, grated
3 large tomatoes, peeled and grated
1 green pepper, finely chopped
1 tsp salt
1. Heat the oil in a pan, add the onion and sauté until golden brown.
2. Add the masala and garlic and stir into the onion. Add the carrots and fry with the onion for a few minutes, then add the tomatoes and green pepper. Add the salt, give the mixture a good stir, then cover with a lid and simmer on low heat for about 40 minutes.
3. Check the mixture every 10 minutes or so and add ½ cup water if it is getting dry.
4. Serve as a side dish with meat or with fresh crusty bread.
