Crock Pot Spanish Soup

Servings: 6

Ingredients

(Optional) pinch of cayenne or dash of Tabasco 

Pinch of saffron

1/4 tsp of ground black pepper

1 tsp of salt

2 large bay leaves

1 tsp of dried thyme

1 tsp of paprika

1/4 cup of dry sherry

4 cups of vegetable broth

3 medium peeled potatoes, cut thick into 1-inch half moons

4 medium thinly sliced onions

Preparations

1. In a 5-Quart slow cooker, combine sherry, broth, potatoes, seasonings and onions.

2. Cook with the lid on for 4 to 6 hours on LOW or until the onions and potatoes and are soft.

3. Discard bay leaves and adjust the seasonings accordingly.
