Ingredients
Salt and Pepper to taste
1 (14-1/2 oz) can of diced tomatoes, undrained
4 cups of chicken broth or vegetable, reduced-sodium
2 minced cloves garlic
2 thinly sliced stalks celery
2 large thinly sliced carrots
4 cups of green cabbage, thinly sliced
2 (15 oz each) cans of white beans, rinsed and drained
Preparations
1. Pour a little water and one can of the beans in a blender or food processor and puree.
2. Add the pureed beans and every other ingredients in a 4- to 5-Quart slow cooker.
3. Cook with the lid on HIGH 4 to 6 hours or 6 to 8 hours on LOW until the vegetables are tender.
