Crock Pot Veggie Quesadilla

Ingredients

1⁄4 cup shredded, mozzarella cheese, fat-free

1⁄4 cup of shredded cheddar cheese, fat-free

2 wheat flour tortilla

1 dash of salt

1 dash of black pepper

1 dash of cayenne pepper

1 teaspoon of soy sauce

1 tablespoon of diced red bell pepper

2 tablespoon of diced onion

1⁄3 cup chopped broccoli

1⁄3 cup shredded carrot

1⁄2 cup sliced mushrooms 

1⁄2 tablespoon of olive oil

Preparations

1. Use a big frying pan that can easily contain the tortillas, add olive oil and sauté vegetables about 5 to 7 minutes over medium/high heat. Season with peppers, soy sauce, and salt. Transfer the sauté vegetables in a bowl.

2. In the same frying pan over medium/low heat, Add 1 tortillas, sprinkle with 1/2 cheeses, then evenly spread-out the vegetables on the cheese, and sprinkle with the remaining 1/2 cheeses.

3. Place the other tortilla over the top and cook until the cheese melts, about 1 to 2 minutes.

4. Turn the quesadilla over to the other side and cook for 1 to 2 more minutes.

5. On a cutting board, slice the quesadilla into 6 equal parts like a pizza.

6. Serve Immediately aside shredded lettuce, fat-free sour cream and salsa.
