Corned Beef & Carrot Cabbage

Ingredients

1 (4-lbs) corned beef with seasoning packet, discard excess fat

1 cup of water

1/2 medium cabbage head, cut into wedges

6 medium yellow or red potatoes, peeled and cut into thick

1 large onion, cut thinly wedges

6 large carrots, chopped into chunks

Preparations

1. Place the cabbage, potatoes, onion, carrots and water in a 6 to 7 Quart slow cooker.

2. Add the seasoning packet spices evenly over the beef and then add in the slow cooker, over the vegetables.

3. Cook with the lid on for 10 to 12 hours on low or for 5 to 6 hours on high or until vegetables are soft and meat is cooked through.

4. Withdraw the beef from the crock pot and allow cooling for 15 minutes.

5. Place meat on a cutting board and slice thinly across the grain then transfer unto a platter.

6. Scoop the vegetables onto the platter beside the meat. Serve with horseradish or mustard, if desired.
