Ingredients
(Optional) low sugar ketchup
(Optional) Parmesan or Swiss cheese
1/2 cup of thinly sliced cheddar cheese
1 tsp of garlic powder
2 tsp of salt
1 small diced yellow onion
1/2 cup of parmesan cheese shredded or flaked
2 large eggs
2 lbs 9 93% lean or more of extra lean ground beef
Preparations
1. Spray a Pyrex loaf pan it with non-stick cooking spray.
2. Add all ingredients with the exception of the ketchup and the cheddar cheese in a large mixing bowl.
3. Mix the ingredients carefully using your hands to avoid over mixing.
4. Fold in cheddar cheese and spoon the mixture into a loaf pan to make fine loaf.
5. Cut aluminum foil in long sheets, fold it into half lengthwise and place crisscross into the slow cooker, it will give you an easy access to pull the foil at the end, using it as an handle to pull the loaf pan out of the slow cooker.
6. Set the loaf pan in the slow cooker, and roll the foil top over, to avoid meddling with the meatloaf.
7. Cook for about 8 hours on LOW or 4 to 6 hours on HIGH. Check meat with a thermometer to read 160° F.
8. Place the cheese, if using once it reads 160 degrees, until it melts, about 10 to 15 minutes.
9. Use oven mitts and gently make use of the foil "handles" to withdraw loaf pan. Set aside to cool until you're ready to remove. Slice, serve and enjoy.
